Galka : Tangy Mango Sauce

Galka is a tangy mango sauce, which is majorly enjoyed during summers in northern India. This can be kept for 7-10 days in a refrigerator in an airtight container. 2 Raw mangoes
½ cup Sugar
2 tablespoon mustard oil
½ tablespoon roasted cumin powder
½ tablespoon chilli flakes
½ tablespoon asafoetida
½ T spoon mixed spices (panchforan/ Fennel seeds and Onion seeds)
1 ½ to 2 cups of water
Salt to taste


  1. Wash and peel the mangoes, cut them into small pieces
  2. Heat oil in a pressure cooker and add mixed spices
  3. Add asafoetida and mangoes then mix it well
  4. Add salt to taste, 2 tablespoons of water and close the lid
  5. Cook for 3 min or 1 whistle
  6. Add roasted cumin powder, red chilli flakes and sugar, mix it well
  7. Add 1 cup of water and cook for another 3-4 min
  8. Let it cool and bring it to normal temperature then keep it in a refrigerator in an airtight jar
  9. Enjoy it for 7-10 days
